Meet Our Main Chefs

Andy Matsuda

Chef Andy Matsuda was born near Kobe, Japan in 1956. When he was 9 years old, his family started a small Japanese restaurant where he learned the joy of cooking. After graduating from high school, he began to work as an apprentice at ‘Genpachi’, one of the most famous restaurants in Osaka, he worked there for 5 years. He also became a member of a Sushi Chef Organization called ‘Yosei-kai’. At the age of 23, he returned to his hometown to help expand the family business. A couple of years later at the age of 25, his new challenge in life was to move to Los Angeles, California.

His first job was in Little Tokyo as an assistant, but within a week he was promoted to Chief Sushi Chef.
Since then, Chef Matsuda has worked at fine Sushi Bars in Santa Monica, Aspen, New York, and has had the opportunity to work for major hotels where he learned other ethnic cuisines such as French, Italian, Thai, among others.

At the age of 36, Chef Matsuda faced the biggest challenge of his life; he was diagnosed with Colon Cancer and began the battle for his life. Going through 4 years of intensive treatments and self-reflection, he began to understand the relationship between food and health, people and the environment.

Overcoming Cancer, he was full of appreciation and wanted to somehow pay back his debt of gratitude to American Society. This is his gift to America.

In 2002, he started a Sushi chef training school in downtown, Los Angeles, the “Sushi Chef Institute”. He teaches beginners and professional chefs from all over the world since then. Now the Master Sushi Chef Andy Matsuda also has a partnership with Rafael Otero forming a sushi catering like no other called Matsuya VIP

Hello! Allow me to introduce myself. I am Rafael Otero Torres, and my passion for cooking is deeply rooted in the fascination I have for the way art and culinary expertise intertwine to create a symphony of flavors and captivating presentations. Ever since I caught my first glimpse of chefs skillfully handling teppanyaki and crafting sushi masterpieces, I knew that my destiny lay in the culinary world.

My journey on this thrilling path has led me through experiences in some of the most renowned hotels, such as Paradisus, Grand Melia, and Hotel La Concha, to name a few. Additionally, I have had the privilege of collaborating with well-known sushi and teppanyaki restaurant chains, where I have honed my skills and learned from the best.

Over the course of more than 16 years, I have nurtured my love for the culinary arts and transformed it into a solid vocation. My commitment to excellence propelled me to venture into entrepreneurship, and I am now the proud owner of two unique culinary concepts. Sushi Cloud, my first venture, represents the fusion of Japanese and Puerto Rican culinary traditions. Here, the focus is on fun and creating an unforgettable experience for the whole family, including those who are enjoying sushi for the first time.

On the other hand, Matsuya VIP is a project I have developed in collaboration with my Japanese mentor, Andy Matsuda. Together, we have crafted a catering concept that transcends expectations, taking our valued clients on an unparalleled culinary journey. Every bite of sushi we deliver is a masterpiece, meticulously prepared with the highest quality and Japanese culinary technique. Our goal is to create memorable experiences where excellence and authenticity blend to bring forth a banquet that will be remembered forever.

My story in the culinary world continues to evolve, but my passion for Japanese cuisine and for creating extraordinary culinary moments remains the driving force behind each of my projects. I hope you join me on this exciting journey, where art and food converge in a dance of flavors and emotions.
